stellarshenson bf956106fb feat: add JUPYTERLAB_AUX_MENU_PATH env variable 
Pass custom menu definitions path to spawned JupyterLab containers.
Default: /mnt/shared/lab-utils.d

- read both AUX env vars at top of config (consistent with other vars)
- JUPYTERLAB_AUX_SCRIPTS_PATH refactored from inline os.environ.get()
  to top-level variable reference
